This is definitely not a one pot book. That being said, the recipes we have tried thus far have been easy to throw together and very delicious. Most of the ingredients can be obtained at a store like Walmart. There are a variety of breakfast, sides, soups and salads, a huge main section, desserts and condiments. The pictures are beautiful as always. There is not a photo for each recipe, but there is for many. The book has an interesting concept whereby Dan and his team used AI to search hundreds of thousands of recipes to decipher what US-Americans are craving currently and then they turned those recipes into something healthy. There are a lot of gluten-free options. This book does not skimp on oil and does use coconut milk and or coconut oil in quite a few recipes; however, I have already made some substitutions to reduce and exchange coconut for avocado oil with fine results. There are thankfully no meat or cheese analogues. A small handful of recipes use optional cow's cheese, but there are fully vegan alternatives. Unfortunately, there are no metric measurements. I think there is only one repeat from his original cookbook. The salsa macha recipe alone is worth the price of the book.
Couldn’t wait to get this cookbook but I am disappointed with recipes were not as easy to put together as I had hoped.For a more experienced home cook than me.

I received my copy of One Pot Meals today. It’s a beautiful book with beautiful photos and beautifully written. Easy to read and follow recipes. I’m looking forward to eating my way to 100!
